Zoom Ricotta Gnocchi with Elementary Italian II

If you love gnocchi, you should try the ricotta gnocchi! And if you are not a big fan of gnocchi…you should still try the ricotta gnocchi!

For any people who don’t like gnocchi, this dislike is due to the texture or the “chewiness,” but ricotta gnocchi is a gamechanger! Even the recipe is easier. All you need to do is stir four simple ingredients together: flour, eggs, ricotta, and parmesan cheese. Next, you season with salt and pepper, roll out some snake-like shapes, and cut the dough into the size that is good for you. Now you have some beautiful gnocchi rustici! However, if you want to continue the fun, you can add some indentations to the gnocchi so that they will collect more sauce– which makes them more delicious! You can do this with a special tool called rigagnocchi, or with a fork. With a simple gesture, you can add more style to your gnocchi 🙂

In a previous Zoom cusine workshop, the class learned how to make Scarpinocc, a kind of ravioli from my region, Lombardia. The recipe is a secret ;), if you want to learn it, just take Italian!

Alla prossima.
